The Summer Truffle matures from May until end of August in Italy, the provence (France), Switzerland and South Germany. When ripe the Summer truffle gives off a pleasant earthy (humous) fragrance. The color of the flesh lasts from yellow-brown to light-brown. The outside flesh can vary from dark brown to black. Latin: Tuber aestivum
