This truffle is the most popular and aromatic truffle. The White Alba truffle is available from October until beginning of January. The flesh and outside yellow, smooth surface gold color has an intense taste of garlic, onion and soft cheese. Latin: Tuber Magnatum Pico.

Ideal to: Pasta, Ravioli, Risotto, Polenta and egg dishes. We recommend thinly shaving the truffle on top of the pasta, risotto etc. We recommend not to cook the white Alba truffle in sauces but to use in its natural form.
